EMPLOYMENT OBJECTIVE

To obtain a culinary and hospitality management position in an 
environment that will provide opportunity for continued growth, 
skill development, and professional advancement.

EDUCATION

EAST CAROLINA UNIVERSITY    Expected date of graduation is May, 1999.  
Enrolled in the Hospitality Management degree program.

WESTERN CAROLINA UNIVERSITY    Began studies in Fall semester, 1992. 
Completed two year's course work. Accepted outside employment to 
develop skills and receive training in food preparation and kitchen 
management. Transferred to East Carolina University for the Fall, 
1997 semester.

EXPERIENCE
  
MICA'S, Cashiers, NC    Line cook   May, 1997  to  August, 1997.
Food preparation and cooking of many menu items. Remained in employment 
until returning to university studies at East Carolina University.

THE MARKET BASKET, Cashiers, NC    Line cook   September, 1996  to  
January, 1997.
Accepted employment to continue training with Richard Long, who moved 
from The Library to this establishment.

THE LIBRARY, Sapphire Valley, Cashiers, NC    Line cook   September, 1994  
to  September, 1996. Trained under Greenbriar Culinary Institute graduate 
Richard Long. Beginning as dish/pot washer, then promoted to fry station 
followed by a promotion to the position of expeditor with a final 
experience as saute cook. Additional duties included ordering produce 
and other restaurant products, and food preparation.  

THE ISLAND INN, Ocracoke, NC    May through December, 1993, and  
May through August,1994. Began with minor assignments and received added 
responsibilities and rapid promotions. Line cook in charge of all kitchen 
operations, including food ordering and preparation/cooking, from September  
to December, 1993, as an internship from Western Carolina University 
for the 1993 Fall semester. Took over primary kitchen responsibilities when 
the permanent chef suddenly resigned.

SKILLS AND INTERESTS

Food preparation    skilled in most areas of food preparation and 
kitchen management.

Technology    proficient in using many software applications for word 
processing and spreadsheet operations, Internet use, and other more 
specialized applications.

Interests    enjoys cooking, reading, writing, woodworking, hiking, 
mountain climbing, and other outdoor activities.

PERSONAL INFORMATION

Born and raised in Greenville, North Carolina. Twenty-three years of age. 
Graduated from J. H. Rose High School,  June, 1992. Parents are 
university professors at East Carolina University. Older brother is a 
project manager at IBM; younger sister is a recent graduate 
of Meredith College.
